One thing that most def sucks about healthy eating is holiday healthy eating.
You hate to feel like the arse who doesn’t eat the main course animal protein dish but you also hate to sit there with a hungry arse whose progressively gets more hangry by the minute.
My solution is two fold:
1 – make your own plant-party main course. Ya gotta have a plant-protein!
2 – SAVE A TURKEY ….. MAKE THIS TEMPEH.
That’s right, and that’s how the song goes…
I wish I could take full credit for this recipe but it’s by my plant-food mentor Terry Walters, who’s been on my podcast!, and whose outstanding maple mustard marinated tempeh recipe from this baller cookbook has proudly been my go-to holiday protein dish for like a solid 6 years now.
(It’s really really really good and fully takes the place of Turkey for the holidays. Hence the whole ‘SAVE A TURKEY MAKE THIS TEMPEH’ song in the video above…)
- 2 packages of tempeh
- ½ cup evoo
- 4 garlic cloves, minced
- ¼ cup mustard of choice
- ¼ cup maple syrup
- ¼ cup lime juice
- ¼ cup tamari
- Mix all marinade ingredients together in a baking dish.
- Cut the tempeh into cubes or strips or turkey cutouts!
- Marinate tempeh in a baking dish for 30 minutes.
- Preheat oven to 425.
- Roast tempeh in marinade for 10 minutes. Flip and roast for another 10 minutes.
