Kale Chips! (For Earth Day)

It’s Earth Day, peeps! And how better to celebrate mama nature than by eating legit PLANTS. In the most yummiest way possible.

That’s why I’m giving you 3 amazing KALE CHIPS recipes!

The first one’s gonna satisfy your sweet tooth. It stars the super sweet and good-for-you coconut sugar and comes from the must-buy book Superfood Snacks.

The second one’s gonna hit those salty cravings.

And the third recipe, featuring the protein-rich tahini, is gonna feel like a guilty pleasure – but it’s really not. Because ‘cmon – you’re eating kale for crying out loud.

Kale chips are really the greatest way to get your daily dose of greens into your bod. Seriously – after making these chips, I ate the entire 3 batches in one day. Which means I ate 3 heads of kale. Without force-feeding/begging myself/gagging…not even once!

So if you’re looking for a healthy snack, or a way to get more greens into your life, or a way to eat healthier without hating your life, these crispy cruciferous snacks are your new jam.

Kettle Kale Crisps

Ingredients
  • 1 head of kale
  • 1 tbsp coconut oil, MELTED
  • 2 tbsp coconut sugar
  • ½ tsp sea or pink salt
Instructions
  1. Preheat the oven to 300 degree F.
  2. Wash and dry kale.
  3. Break it into small pieces (not including the stem) into a big bowl.
  4. Drizzle the melted coconut oil onto the kale and massage it in until the kale is soft and fully coated.
  5. Add the coconut sugar and salt and massage again so they're evenly distributed.
  6. Place on a baking sheet, lined with parchment paper, and bake for 15 minutes.
  7. After 15 minutes, remove the chips from the oven, use a fork to flip them over and spread them out, and put them back in the oven for another 10-15 minutes (or until crispy).

  • ½ tsp sea or pink salt

  4. Drizzle the olive oil onto the kale and massage it in until the kale is soft and fully coated.
  5. Add the lemon juice and salt and massage again.
  6. Place on a baking sheet, lined with parchment paper, and bake for 15 minutes.
  7. After 15 minutes, remove the chips from the oven, use a fork to flip them over and spread them out, and put them back in the oven for another 10-15 minutes (or until crispy).

Nacho Cheesy Kale Chips

  5. Using your hands, message the paste into the kale so it's evenly distributed.

  7. After 15 minutes, remove the chips from the oven, use a fork to flip them over and spread them out, and put them back in the oven for another 15-20 minutes (or until crispy).
