Healthy Penne Alla Vodka {ie. Penne AllMOST Vodka!} w/ Modern Table Lentil Pasta

Growing up, I remember feeling sooooo cool eating penne alla VODKA when I wasn’t legally allowed to even drink vodka! But beyond the “cool” factor (and obviously the delicious factor, too), I was just left with the feeling crappy factor – and the bell bottom jeans fitting tighter factor, too.

Because alongside all the “cool” vodka, a traditional vodka sauce has heavy cream galore which, once I started eating healthfully, suddenly made that dish the opposite of cool to me!

Well, my pasta loving pal, with my HEALTHY Penne Alla Vodka recipe, I’ve totally put the cool BACK into penne alla vodka – WITHOUT putting any digestion destroying HEAVY CREAM into it, too!

My healthy Penne Alla Vodka (ie. Ingredients
  • SAUCE INGREDIENTS:
  • 1 cup store-bought marinara/tomato sauce
  • ½ cup raw cashews
  • ½ tsp sea salt
  • 2 tsp coconut sugar
  • ½ cup basil
  • REST OF DISH INGREDIENTS:
  • 1 package Modern Table Lentil Penne! (order here with coupon code "PARTYPLANTS" for 10% off!)
  • a bunch of kale! (the amount is up to you!)
  • a bunch of cherry tomatoes (you decide how much)
  • parsley, for optional but awesome garnish
Instructions
  1. In a blender, combine the "sauce ingredients" and blend until the sauce is super saucy!
  2. Set that aside and cook your pasta as per the instructions on the package (which says boil for 8-9 minutes then strain but don't rinse!).
  3. In a saute pan, saute the kale and cherry tomatoes with a pinch of sea salt and a spray of coconut oil!
  4. Also, heat up your sauce on the stove over low heat - be careful not to burn it!
  5. When everything's cooked to perfection, combine it all together for even MORE perfection!
  6. Serve with a garnish of sprinkled parsley and prepare to make mouths VERY happy 🙂
