Just like moi, Jessica was diagnosed with IBS! But unlike moi, she did not have it.
She later found out that has stage 4 endometriosis which = a reproductive disorder when the tissue similar to the lining of the uterus grows outside of the uterus and can grow onto other parts of the body. Gross. And painful. 1/10 woman have it, and it takes an average of 10 years and 8 doctors for a woman to be diagnosed with endo!
(Symptoms include diarrhea, constipation, painful sex, peeing all the time, not able to hold urine, heavy period, blood clots, digestive issues, INFERTILITY…)
Many women who have endometriosis have NO IDEA, btw.
So, what led Jessica to the plants?
Her friend realized just how REAL her health problem was for her. She literally said to Jessica – “Chronic pain can become your personality.” OY.
So her friend sent her a link about how plant-based diets could help with endo (this was 7 years ago when plant-based wasn’t as much of a “thing”).
At the time, Jessica was eating candy, not cooking, Lean Cuisine, etc. but fast forward 7 years, and she did not get a hysterectomy and wrote a plant-based cookbook!
During her journey into plant-based life, candy was the last to go. And for the first two weeks, she ate corn tortillas with salsa for lunch every day – and it made her feel WAY better.
So, how did she go from celebrating making salsa to creating a COOKBOOK?(A truly amazing cookbook, at that. Not just saying it!) → Well, her recipes are simple. Like me, she doesn’t want to take the time to make complicated recipes.
Her favorite recipe from her book right this second? Chocolate chip cookies and the lasagna!
I love how Jessica’s in-laws were previously skeptical about Jessica feeding him all plant-based – but now they are the biggest advocates of this approach! I also love how she doesn’t FORBID unhealthy food, she just tells her son Sid “it’s not bad food, just something we don’t eat.”
